450g (1lb) lean minced beef or lamb 75g finely chopped onions 10ml cooking oil Sprig chopped thyme Sprig chopped parsley 1 beaten egg Pinch salt and pepper Fresh rolls or brioche buns
Method
Melt the butter in a saucepan with the onion and fry over a gentle heat until the onion has softened. Mix the mince, herbs and egg. Add the onions and a pinch of salt and pepper, and mould into burgers. Grill the burgers on a medium heat for several minutes on each side. Pop into a fresh roll or brioche bun ready to serve.
Use a grater for the onions and don’t assume you will need the egg or at least all of it, normally they will bind by themselves. When grilling pre oil the BBQ bars and just nudge the burgers and wait till they move before flipping them, don’t flip them again just wait till they move with a nudge, don’t forget the salad to go in them, onion mushroom relish let your party build their own, it’s fun! . Also try different flavourings chilli etc. Or try lamb mince with cumin and coriander for a donna kebab flavour, lightly toasting the buns is good too. Now I’m getting hungry!!!
