    Step 1:

Get your firepit set up where you're going to be cooking. It needs to be somewhere close to a table where you're going to be preparing your food. We used our Plain Jane Firepit which includes a detachable grill. We recommend your grill is attached but moved out the way for the lighting of the fire so you can simply move it closer when needed.

To light your fire, we recommend you use use our Grill & Chill logskiln dried kindling, and our Flamers natural firelighters. If you'd like to try something new, you can also ditch the kindling and simply place a KindleFlamer between two logs, then a couple of logs on the top and light. We recommend our Grill & Chill for cooking with as they are thinner cut and so you will get a fire going and up to cooking temperature quickly.

Once your fire is lit, set up a tripod and hang a kotlich full of water off it so it starts to warm up. If you don't have a kotlich, you could do the same with a dutch oven which you would place inside the fire. We found the kotlich easier to use when working with a full fire.

    Step 2:

Whilst your kotlich is warming up, half your new potatoes and carefully tip them into the water. Pop the lid on the kotlich and let them boil for 15 minutes. To check if your potatoes are cooked, take your knife and stab a potato in the pot. Lift the knife up and if the potato slides off easily, it's cooked.

    Step 3:

While your potatoes are cooking, you can start to prepare your other ingredients. Finely slice the mushrooms (or quarter if preferred) and carrots, crush and chop the garlic, and peel and cut the red onion.

    Step 4:

Once your potatoes have cooked, take the kotlich pot off the firepit along with the tropod. Please take good care with this step as the fire will have warmed the appliance up so we recommend you use gloves. Carefully drain the potatoes and then let them sit in the pot until needed.

Check if you need to feed the fire with more logs, making sure you have a hot fire all the time. Move the grill panel over your flame, then add enough oil to your skillet so that it covers the entire base. Place the skillet on the firepit and allow the oil to warm up. Add the chopped up veg (but not potatoes yet to avoid overcooking) and fry until the veg has browned and softened and there is a nice juice generated in the pan. Add the potatoes and continue to dry for a few more minutes. Towards the end, add the herbs for extra flavour.

    Step 5:

Carefully remove your skillet from the firepit and take a moment to admire your mouthwatering creation. Then of course, when you have done this, it's time to start eating! We enjoyed it on it's own, but it's a perfect addition to fish or meat too.
